108 | Critical Improper Cleaning, Sanitizing of Equipment and Utensils Observation: Sanitizing rinse for dishwashing not at proper concentration for adequate time (Chlorine 100ppm / QAC 200 ppm / Iodine 12.5ppm). Corrective Action: New sanitizer ordered and installed July 11, 2005. Sanitizer (200ppm QAC quaternary ammonium) checked with test strip and is now functioning adequately. Operator will maintain and monitor sanitizing rinse on a regular basis. |
