108 | Critical Improper Cleaning, Sanitizing of Equipment and Utensils Observation: Sanitizing solution for wiping cloths not at appropriate concentration (test strip indicated ~100ppm QAC at time of inspection) in spray bottle as well as bucket with cloths. Corrective Action: Sanitizing solution (QAC 200 ppm) with wiping cloths must be kept in a separate container, monitored with test strips and changed every 2 hours - prepared at time of inspection. Concentration from automatic dispensed at 200ppm QAC - obtain test strips and monitor on a regular basis. |

108.The dishwasher is operating with the final sanitizing rinse at the proper concentration (100ppm Chlorine). Test strips were available - please monitor concentration of sanitizing solution in the final rinse on a daily basis.
Other areas noted at time of inspection.
-all refrigeration temperatures including food display case, deli cooler, and 'delfield' fridge <4C - good!
-freezers <-18C - good!
-facility is very well maintained and organized!
