Observation: The temperature of the pizza freezer was noted at a higher temperature than -18C
Corrective Action: This should now be investigated and repaired/adjusted.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The general cleaning was poor.
Corrective Action: Walls, floors and work equipment should now and routinely be thoroughly cleaned. I recommend that the lighting in this area be assessed for improvement to assist in cleaning.
116   Improper Construction / Maintenance of Establishment
Observation: The door edge gaskets and the door handles of the pizza line fridge were damaged.
Corrective Action: These should now be replaced to assist with temperature control and cleaning.

Observation: There are damaged floor areas in front of the pizza line station and near to the kettle where the seams have lifted.
Corrective Action: These areas should now be repaired/replaced leaving a smooth, impermeable and cleanable surface.
