102 - The organization in the walk-in cooler is good, all raw meat is stored separate from ready-to-eat foods with clear labels on the shelves indicating where hazardous foods are to be placed.
108 - Quat sanitizer is available in an adequate concentration (200 ppm), staff are using sani-buckets for wiping cloths; monitor to ensure this is always done.
110 - Freezer temperatures are -18C = good.
115 - There is no evidence of rodent activity.
