Observation: The wooden rack used to store dumplings is worn and not easily cleanable.
Corrective Action: Refinish the wooden gyoza and dumpling storage rack that is located on a shelf in the walk in cooler.

Observation: There is a gap in the FRP panels immediately behind the dishwasher.
Corrective Action: Seal the gap so that moisture does not penetrate into the wall behind the dishwasher.

Below are the items addressed from the previous report:

The tiles in the dry storage area have received enhanced cleaning.

The shelving against the wall in the dishpit has been replaced the shelf with green wire racks

The fans in the dishpit have been cleaned.

Enhanced cleaning underneath equipment and counters has been completed

Some old cutting boards have ben replaced and some new ones provided

The walls in the dishpit have been covered and sealed with FRP panels.

The shelving in the dry storage area has been completely refinished so that it is easily cleanable.

Dishwasher is working correctly at time of inspection.
