Observation: The water condensate drainage issue in the walk in freezer has not been addressed. At the time of this inspection, the condensate from the freezer has been accumulating in one of the food trays. The operator has failed to correct this violation despite the repeated requests by the Environmental Health Officer. A violation ticket of $230 is being issued this time.
Corrective Action: The water condensate drainage pipe must be repaired and the condensate must be drained in a way so as not to contaminate the food in the walk in freezer. The operator take the required corrective actions with in 2 days of this inspection to avoid further enforcement action. The food trays in touch with condensate were discarded by the operator on EHO's request.

Observation: The temperature gauge on the dishwasher is not accurate.
Corrective Action: The temperature gauge on the dishwasher must be repaired. The target completion date extended for 2 months from the date of this inspection.

Observation: The old freezer, currently not in use, is being stored in the kitchen.
Corrective Action: Any equipment not needed for the day to day operation of the food premises must be removed from the premises. The old freezer must be removed from the premises within 1 week from the date of this inspection. The EHO has requested the operator to remove this equipment from the kitchen many times in the past.

Comments:

1. The dishwasher is sanitizing at more than 71 Degree Celsius on the dishes.
2. The glass washer is sanitizing at more than 12.5 ppm iodine concentration.
3. The walk in cooler and the line coolers are less than 4 Degree Celsius.
4. The freezer temperatures are below -18 Degree Celsius.
5. Foodsafe certified food handlers available onsite..
6. Temperature logs being maintained for the current month.

Violation ticket of $230 being issued for failing to ensure proper construction, condition of use of equipment.
