103  Critical Food Not Protected From Contamination - Other Sources
Observation: An insert of Greek salad used to garnish pizzas was sitting in a sink filled with snow at the end of the pizza oven.
Corrective Action: Because snow is not composed of potable water, it cannot be used to store inserts of foods as it poses a risk of contamination. Greek salad must be stored in the pizza cooler until another alternative can be arranged. Discussed installing a small counter-top cooler for the Greek salad - this would be acceptable.

Observation: The counter at the end of the pizza cooler is detached from the wall leaving a gap where moisture and food can accumulate.
Corrective Action: Counter must be re-sealed to the wall.

Comments:

Items addressed from previous report:
1. All baked goods are now individually wrapped.
2. Racks in the walk-in cooler appeared clean.

Overall there were no major concerns identified during this inspection. The following items were in compliance:
1. All temperatures of refrigeration units met regulatory requirements.
2. Thermometers were noted in all coolers.
3. Hand washing stations were equipped with liquid soap and paper towels.
4. The dishwasher final rinse temperature tested >71C at the plate.
5. Staff were observed taking measuring and recording temperatures during the inspection.
6. All hot holding temperatures measured >60C.
7. Facility has a contract with a pest control company, there were no signs of pests during this inspection.
8. BBQ hut relocated from Raven's Nest - currently has portable hand washing station and mechanical refrigeration. Consider adding some additional siding or panels that can exclude snow from the building when not in use.
9. Sanitizer concentration in spray bottles tested >400ppm quat. As discussed with operator, this is due to increased water pressure resulting in a richer mix being dispensed from the chemical dispensary. These units should be adjusted and/or staff trained to carry out a dilution to ensure that sanitizers are kept at their optimal concentration as per manufacturer's specifications.

Future Upgrades:
1. Discussed adding additional pallets or shelving for storage downstairs.
2. Discussed plans to paint downstairs concrete floor during off-season.
3. Discussed installation of a bakery aquarium or sneeze guard in place of individually wrapping baked goods.
