Observation: Dishwasher not working at time of inspection. Electric breaker panel providing power to dishwasher, is being repaired.
Corrective Action: Dishwasher must be repaired/functioning by April 26, 2011. Dishwasher must provide rinse water temperature of 180F. Dishes are being manually washed/rinsed/sanitized temporarily. EHO will follow-up April 26, 2011. If dishwasher not working, a violation ticket of $230. will be issued.

Observation: 1. New food prep tables required.
Corrective Action: 1. New stainless steel prep tables to be purchased (before July 1, 2011).

Observation: 2. Walk-in cooler not working.
Corrective Action: 2. Walk-in cooler must be repaired and maintain food temperatures at 4C, or colder (potentially hazardous foods are currently stored in freestanding refrigerators, until walk-in cooler is repaired). To be completed before July 1, 2011.

Comments:

Other items noted at time of inspection (in compliance with Regulations):
- Handwash sink supplied with liquid handsoap and paper towels.
- Fridge temps recorded 4C
- Freezer temps recorded -20C
- Foodsafe certified staff on-site
- No cooked foods hot-holding
- Bleach water sanitizer used for wiping food contact surfaces.
- Thermometers inside all coolers = Operator monitors fridge temperatures daily.

Operator is currently planning a renovation for restaurant. Operator is moving into new restaurant space in Chieftain Hotel, effective July 1, 2011. The existing restaurant dining area will no longer be in use. The kitchen space will remain the same, however, with a new entrance to the new dining area.

The following items must be completed before July 1, 2011:
- Submit plans of renovation, for review and approval, prior to any work being conducted.
- Renovate/upgrade kitchen according to approval letter issued to operator, dated October 6, 2010.
- Restaurant must be closed during any renovation periods. Restaurant cannot operate after July 1, 2011, until written approval from EHO has been given.If upgrades/renovations are not complete by July 1, 2011, then violation tickets or closure order may be issued.
