Observation: The dishwasher is not showing any detectable sanitizer in it.
Corrective Action: Fix the dishwasher immediately to get 50 ppm chlorine and in the meantime manually sanitize all the serving trays and other dishes.
116   Improper Construction / Maintenance of Establishment
Observation: Walk in freezer and coolers are in need of cleaning. The kitchen floor is greasy. Some hard to reach areas in the customer service area are filthy.
Corrective Action: Increase the frequency of cleaning in these areas.
118   Other (Specify)
Observation: The supervisor on duty at the time of this inspection was not aware about the proper handling procedures for the cheese products that were being stored at the room temperature. No apparent time control is in place for these processed cheese products.
Corrective Action: The employees in the supervisory role should be aware of the nature of the foods being served in the establishment and should be able to refer to appropriate section of the food safety plan when needed.
