Observation: Rarely cooked bison tenderloin was being stored in a tray with other prepared/cooked meat within the walk-in deli fridge. Blood from the bison was in contact with the other meat.
Corrective Action: Foods should be protected from blood and juices leaking from raw/rarely cooked foods.

Observation: The deli meat fridge located opposite the meat counter was noted, on the upper level, at +12C.
Corrective Action: This should be investigated and the food moved to a safe temperature until the refrigerator is repaired.

Observation: Shell fish origin identity tags were not consistantly being kept.
Corrective Action: These must be kept and made available for inspection for up to one year.

Observation: Sanitizer was provided, within the meat/fish prep area, from an automatic dispensing supply direct to a hose line. The concentration of the quat sanitizer was measured at 100ppm.
Corrective Action: The sanitizer should be adjusted to 200ppm and routinely monitored.

Observation: Mouldy food was noted within the reach-in fridges of the deli department and day/date labeling was not being consistently carried out.
Corrective Action: Mouldy food was discarded. A system of good stock control and stored food status awareness must be implemented. Deli foods on the main service/display counter must also have a system where food status is known at any given time.

Observation: The walk-in freezer was in need of cleaning.
Corrective Action: This should now and routinely be thoroughly cleaned.

Observation: The shelves of the walk-in deli fridge were dirty.
Corrective Action: These should now be cleaned.

Observation: The areas behind and beneath the pallets within the warehouse were in need of cleaning.
Corrective Action: The warehouse should routinely be thoroughly cleaned.

Observation: There are several rusty shelf fittings within the walk-in deli fridge.
Corrective Action: These should now be treated or replaced leaving a smooth, cleanable and impermeable surface finish.

Observation: There are ceiling tiles over the bakery oven that are dirty/stained and now difficult to clean and reduces the light level in that area affecting cleaning procedures.
Corrective Action: The ceiling tiles should now be replaced.

Observation: Part of the laminate finish on the laminate covered counter within the deli department was damaged in areas and now difficult to clean.
Corrective Action: This should now be repaired/replaced.

Corrective Action: The grease trap and the floor drainage should now and routinely be cleaned.

Corrective Action: These should now both repaired leaving a smooth, cleanable and impermeable surface.

Observation: There were areas of white ceramic tiling in disrepair; beneath the hand sink within the meat/fish counter; on the access panel to the electrical multi-point connector (adjacent the lobster tank) and to the area of the wall behind the l/h food slicer within the deli department.
Corrective Action: These should now all be repaired leaving a smooth, cleanable and impermeable surface.
