Observation: The backflow prevention device on the pop lines (above the mop sink) does not appear to have been tested recently.
Corrective Action: These devices must be tested annually by a qualified person.
503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: There is a double drawer filing cabinet at the right hand side of the three compartment sink which is being used as a counter. The top is currently covered with cardboard and tape. The surface is absorbent and not washable.
Corrective Action: Remove cardboard and tape. All surfaces must be smooth, non-porous and washable.
704   Written procedures to ensure critical limits are met (Sec 23 (3)(c))
Observation: No temperature logs were available on site at time of inspection.
Corrective Action: Temperature logs must be kept on site and be available for inspection at all times.

Comments:

The following items were in compliance with regulatory requirements:
- Hand washing station equipped with liquid soap and paper towel.
- Refrigeration temperatures were <4C.
- Hot holding temperatures were >60C.
- Thermometers were noted in coolers.
- No concerns noted with food storage, all items covered and dated.
- Pest control program in place, no signs of pests during today's visit.
- Foodsafe trained personnel were on site at time of inspection.
- Quat sanitizing solution in spray bottles tested 200ppm.

Three compartment sink is used for dishwashing. Please remind staff that proper method is wash, rinse, sanitize in that order. Also, dishwashing should flow in one direction. Do not store dirty dishes in the sink next to where clean dishes are stored.
