Comments:
This facility was not fully operational at the time of this inspection. All the refrigeration units were shut off and there was no employee who works exclusively for the Deli section. The only operating equipment is the hot holding tray. The frozen patties are being baked in the oven and hot held in this unit. This hot tray was at an acceptable temperature at the time of this inspection.
The sanitizer dispenser is dispensing adequate concentration of sanitizer solution.
The operator is advised to maintain a temperature log for this hot holding tray.
The operator to contact the EHO office when this facility is ready to become fully operational.
