Observation: Raw food in cooler and freezers stored above and amonst ready to eat food items,
Corrective Action: Reorganise all of the freezers and the walk in cooler so that all raw meat is stored separate from other food items.
116   Improper Construction / Maintenance of Establishment
Observation: Enhanced cleaining is required throughout the kitchen. Particularly behind and underneath equipment in the main kitchen area.
Corrective Action: Clean the following items/areas: -The storage buckets under the prep table used to store equipment - remove all unnecessary equipment from these storage areas and provide a means to protect them against falling debris. Clean behind and underneath the grill area, the front and sides of the drawers for the prep coolers, and the plastic stackable shelving,

Comments:

No evidence of pests at time of inspection. Dry storage area is clean and well organized. Ensure all items from this report are corrected by November 4th, 2009
