108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: The sanitizer container for the front bar glass washer is empty.
Corrective Action: The glass washer must provide 12.5 ppm or more iodine solution in the rinse cycle. Do not use this glass washer until it starts providing the adequate concentration of sanitizer in the rinse cycle.
113   Improper Sanitary Facilities
Observation: A dedicated hand washing station is not available . One of the sink has been temporarily covered with the steel sheet and turned into a counter space. Currently, the dish sink is being used for the purpose of handwashing.
Corrective Action: A dedicated hand washing station should be provided. Please remove the cover from the existing hand sink in the kitchen and provide a paper towel dispenser by this sink.

Comments:

This is the first inspection report after the ownership change.
1. All temperatures are meeting health requirements. The temperature logs are being maintained.
2. The dishwasher is sanitizing at > 82 Degree Celsius rinse temperature at the manifold.
3. A follow up inspection needed to verify the sanitizer concentrations in the glass washer.
