Observation: Several containers of food observed stored on floor in walk-in cooler and in dry storage area.
Corrective Action: Store all foods in walk-in cooler and dry storage areas - a minimum of 6 inches up off floor. Provide additional shelving if necessary.
113   Improper Sanitary Facilities
Observation: Water is not draining adequately from dishwashing sinks.
Corrective Action: Ensure dishwashing sinks are functioning and draining adequately. Ensure grease taps are cleaned regularly. Hotel owner has been notified.

Observation: 1. Water leak in ceiling above cooking equipment has still not been repaired.
Corrective Action: 1. Hotel owner has been notified that water leaks in ceiling must be repaired. Water pump has been installed on roof, to temporarily remove standing water.

Observation: 2. Unused and/or broken equipment is being stored in kitchen.
Corrective Action: 2. Remove from kitchen any unused equipment and fridges/freezers that are not being used. Hotel owner has been notified to remove any unused kitchen equipment that belongs to hotel.

Observation: 3. Exposed, unfinished drywall at entrance to kitchen - electrical box missing door.
Corrective Action: 3. Paint any unfinished wall surfaces in kitchen.

Corrective Action: 4. Provide tight-fitting door on electrical room beside food storage room. Hotel owner has been notified.

Observation: 5. Several open holes observed in kitchen walls and ceiling.
Corrective Action: 5. Repair/seal any holes in walls and ceiling in kitchen.

Observation: 6. All equipment in kitchen must be maintained in a clean and sanitary manner. Visible food debris observed on shelving and under equipment.
Corrective Action: 6.Clean and maintain all equipment on a regular basis. Use a commercial degreaser to remove grease and food debris build-up.

Comments:

The following items noted at time of inspection:
- Dishwasher sanitizing rinse temperature recorded 180F
- Refrigeration temperatures recorded 3C
- Freezer temperature recorded -16C
- Clean, wiping cloths stored in sanitizing solution (100ppm chlorine)
- Handwash station supplied with liquid handsoap and paper towels.
- Trans-Fat regulation reviewed with operator.
- Addition of pizza to menu has been approved.

Follow-up inspection will be conducted in one month (December 16, 2009) to confirm completion of violations.
