Observation: The ventilation hood filters were in need of cleaning.
Corrective Action: These should now and more routinely be thoroughly cleaned.

Observation: Bicks Horseradish was being stored inside the walk-in cooler in glass jars.
Corrective Action: To prevent risk of contamination from broken glass, glass should be prohibited from the kitchen/storage areas.

Observation: The ice making machine was in need of cleaning.
Corrective Action: The internal surfaces of the cabinet and other parts should now and routinely be thoroughly cleaned.

Observation: The ice sinks in the bar area were being used to store jugs of lemon/lime slices.
Corrective Action: The ice sinks should only be used for storing ice.

Corrective Action: The floor, walls and ceiling of the beer cooler should now be cleaned.

Observation: Food was being stored on the floor of the walk-in cooler, walk-in freezer and on the floor of the dry food store.
Corrective Action: To prevent risk of contamination and cross contamination to food contact surfaces, food should not be stored on the floor at any time.

Comments:

House keeping within the janitors cupboard was in need of better housekeeping, it is recommended that the conveyor system is inspected by a competent person and guards are replaced on the conveyor system to prevent risk of entanglement.
