Observation: The ventilation hood and the walls have not yet been cleaned of the grease and oil. The hood fan has yet not been repaired.
Corrective Action: Clean the walls and the area above ventilation hood. Keep the ventilation hood fan running during any cooking operation.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Ready to use approved sanitizer solution has yet not been provided. This is an uncorrected critical violation.
Corrective Action: Provide 100 ppm bleach or 200 ppm quat in a spray bottle or a sanitizer bucket during the operation of the facility.

- The ice wands are now being stored in a clean container.
