Observation: Sani buckets are not filled with sanitizer, instead dry rags are used.
Corrective Action: Ensure buckets are filled with 200ppm quats and wiping rags are stored in the sanitizer buckets. Second order.

Observation: Bare wood shelving for container storage.
Corrective Action: Finish the bare wood shelving so that it is smooth, non-porous and easily cleanable.

Observation: Too much clutter, too many unnecessary items in warewashing area, preventing access to ware washing sinks and preventing cleaning behind and underneathe equipment.
Corrective Action: This area should be reorganised. Consider providing extra storage space or removing items.

Comments:

Dipper well has been replaced with a push tap. Provide information with respect to the effectiveness of this new connection with respect to ensuring the sanitary condition of utensils stored therein.
