Observation: There is no detectable sanitizer in the sanitizer bucket/sanitizer dispenser. The daily testing and recording procedures needs to be reviewed so that a timely corrective action could be taken. As per the daily record sheet the sanitizer concentration measured in the morning was 100 ppm, but no corrective action was taken.
Corrective Action: The sanitizer dispenser must be repaired to get 200 ppm quat concentration in the solution. The daily sanitizer testing and recording procedures needs to be reviewed to ensure that a timely corrective action is taken.
110   Food Not Protected - General
Observation: The food wrapping is being done in the dirty dish/mug washing area.
Corrective Action: Please change the location of the food wrapping station.

Observation: Packed milk concentrate is being under the counter on the dirty side of the mug washer.
Corrective Action: Relocate the milk concentrate container away from any potential source of contamination.

General observations:
1. All the temperatures are meeting health requirements.
2. The mug washer is sanitizing at > 50 ppm.
3. All the hand washing stations are equipped with soap and paper towels.
