Comments:
Inspection conducted to review recent upgrades in kitchen.
The following items have been changed: 2 new refrigeration units installed, temperatures all <4C and thermometers present in all coolers; new range and grill, stainless steel panels and FRP installed in kitchen, new shelving. Dishwasher also new and moved to opposite side of counter.
Coving is required along the floor-wall junctions - operator indicated that supplies have already been purchased for this task. Light covers which were removed during renovation also need to be replaced.
Other observations:
-All temperatures of existing refrigeration and freezer units met regulatory requirements.
-Dishwasher achieving 50ppm chlorine during rinse cycle.
-Spray bottles available with chlorine at 100ppm for food contact surfaces.
-No signs of pests during inspection.
-No issues noted with food storage.
-Temperature logs are available - ensure that they are diligently filled out daily.
Hand soap and paper towel is available in the kitchen above the 3 compartment sink however as per previous inspection reports staff currently have to use the sprayer for water. Operator has agreed to install a faucet with hot and cold water over the far left hand sink for hand washing. Deadline for installation is December 31, 2011.
