Observation: Walk-in cooler requires immediate attention - dirt,grime,mold on floors, ceiling, and walls esp. near compressor; bare wood shelves; holes in walls; rotted pallets on floor.
Corrective Action: Immediately address violations in walk-in cooler: 1.pressure wash/clean/sanitize floors, ceiling, and walls; 2.paint all bare wood shelving; 3.discard pallets; 4.install tiles/flooring.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: 1.Glasswasher is very old - present sanitizing cycle (iodine concentration 12.5ppm) is acceptable, but pump is barely functioning.2.Sanitation logs not being maintained b/c operator does not have proper test strips.
Corrective Action: 1.Replace glasswasher as soon as possible. 2.Obtain test strips to monitor iodine concentration in final rinse of glasswasher and keep Sanitation log - record concentration of final rinse twice daily during operating hours (form provided).

Observation: 1.Public washrooms on west side of pub require maintenance, repair, renovation.
Corrective Action: 1.Keep washrooms on west side of pub closed.

Observation: 2.Men's washroom on east side of pub requires immediate attention - dirt, grime, missing tiles at time of inspection.
Corrective Action: 2.Clean/pressure wash and replace tiles in men's washroom on east side of pub... immediately!
121  Critical Inadequate food safety training - staff
Observation: None of employees presently on staff have completed the required food handler training program (FoodSafe).
Corrective Action: The operator must ensure that in their absence at least one employee on duty has a FoodSafe Certificate, as per Section 10(2) of the Food Premises Regulation. The fine for failing to have adequately trained employees is $230.00. Have staff complete FoodSafe course as soon as possible.

Inspection 15/08/05 - facility closed at time of inspection.
*Facility has operated for 1 week without a (Health) Permit or Business License - ticket issued from DoS Bylaw Officer... consideration to issue a ticket from this office within 6 months.

-wiping cloths stored in 100ppm chlorine sanitizing solution - good!
-ice scoop stored separately from ice with handle facing out - good!

CONDITIONS OF PERMIT
1.Replace dishwasher by 19 August 2005.
2.Complete repairs to walk-in cooler by 02 September 2005.
3.FoodSafe trained personnel must be in Chieftain Pub at all times during operation.
4.Chieftain Pub is not approved for food preparation.
5.Food service limited to pre-packaged prepared foods.

extensions given for replacement of dishwasher - written confirmation received.

07/09/05 - site visit...
1.cleaning of walk-in cooler completed; flooring to be addressed within the year.
2.final rinse of dishwasher at proper concentration (12.5ppm iodine) - reminder to maintain Sanitation logs on a twice daily basis (provided form again!).
3.wiping cloths stored in sanitizing solution 100ppm chlorine - good!
4.ice scoop stored separately from ice with handle facing out - good
5.liquid soap and paper towels available for handwashing at handbasin in bar area - good!
