Observation: 1. Raw meats were observed stored above produce, in refrigerator.
Corrective Action: 1. Ensure raw meats are stored on bottom shelf, below or separate from, produce and ready-to-eat foods.

Observation: 2. Wiping cloths were not stored in sanitizing solution.
Corrective Action: 2. Store clean, wiping cloths in sanitizing solution (tsp bleach to litre warm water).

Observation: 3. All fridges and freezers did not have visible thermometers inside units.
Corrective Action: 3. Ensure all refrigerators and freezers have accurate thermometers visible inside each unit.

Corrective Action: 4. Monitor temperatures of all refrigerators, freezers and hot-holding units. Record results daily on Temperatur log. Ensure Temperature log is available for inspection by Environmental Health Officer.

Corrective Action: 5. Refill paper towel dispenser in staff washroom. Do not use cloth towels for hand-drying.

Corrective Action: 6. Replace all missing ceiling tiles.

Other items noted at time of inspection:

- New low-temperature dishwasher has been installed.
- New prep fridge installed.
- Refrigerator temperatures recorded 4C, or below = good.
- Freezer temperature recorded -18C.
- Liquid handsoap and paper towels available at handwash stations = good.
- Dishwasher sanitizing rinse recorded 100ppm chlorine = good.
- Permit to Operate posted in view of the public = good.

EHO will conduct follow-up inspection in one month - to check that Temperature logs are being maintained on a daily basis.
