Observation: The walk in cooler appears to be running warmer that 4 Degree Celsius. The morning temperature records show a 5 Degree Celsius temperature.
Corrective Action: Increase the monitoring frequency for the temperature of this walk in cooler and ensure that it is capable of maintaining the refrigeration temperatures of less than 4 Degree Celsius.
110   Food Not Protected - General
Observation: a) Some packed raw meat packets are stored on the top of vegetables boxes. b) The drink bottles are being stored on the floor in the employee washroom.
Corrective Action: a) Make a designated space for the raw meats at the bottom shelf and away from the raw vegetables and ready to eat foods. b) No food items should be stored in the washroom. All the foods must be stored at least 6 inches above the floor.

Comments:

The dishwasher is sanitizing at >81 Degree Celsius in the final rinse cycle. The operator is advised to start monitoring the sanitizing temperatures of the dishwasher.
