Observation: The hand washing station in the kitchen was not readily accessible during inspection - access was blocked. Hand soap and paper towel was also not available except in dishwashing area.
Corrective Action: The hand wash station must be readily accessible at all times and properly equipped with liquid soap and paper towel in dispensers.
114   Improper Garbage Storage And/Or Removal
Observation: Some of the metal racks in the bar coolers have become quite rusted and can no longer be wiped clean.
Corrective Action: These should be replaced.

Observation: During the inspection it appeared that a large concentration of fruit flies was gathered under the stairs where the empty recycling bottles are stored. There are several boxes of empties on the floor. The area is also quite cluttered and not easily accessible for daily cleaning (sweep/mop).
Corrective Action: Everything should be removed and area thoroughly cleaned and re-organized to facilitate easier cleaning in the future. Empties should be stored in containers with lids.
116   Improper Construction / Maintenance of Establishment
Observation: The wooden shelves under the counter in the kitchen by the back sink (non-dishwashing side) are showing signs of wear, paint is chipping off the edges and surfaces are no longer smooth and non-absorbent.
Corrective Action: Shelves must be cleaned and re-painted. Any cardboard used to line shelves should also be removed.

Observation: The floors in the walk-in cooler are difficult to clean because there is insufficient clearance under the 2 shelving units. Also there are several milk crates stacked along the right hand side of the wall - all of which would have to be moved every day to properly sweep and mop the cooler.
Corrective Action: An additional shelving rack should be installed on the right hand side wall and bottom shelves of the other two units raised enough to easily fit a broom and mop underneath.

Comments:

General Observations
1. Refrigeration temperatures met regulatory requirements except for some of the inserts in the salad station and nacho station where temperatures were borderline. Metal inserts should be used wherever possible and fitted with lids. Also make sure that inserts are not overfilled.
2. Thermometers noted in all coolers.
3. Hot holding temperatures met regulatory requirements
4. Temperature logs were up-to-date.
5. Dishwasher sanitizer tested 50ppm chlorine during rinse cycle.
6. Glasswasher tested 12.5ppm iodine.
7. Quat sanitizing solution available for storing wiping cloths.
8. Foodsafe Certified staff on site.
9. Food storage was acceptable, all foods covered and dated.
10. Cleaning maintenance was okay. There was a lot of moisture and grease under the sinks in the kitchen - this area is due for a thorough cleaning.
