Observation: Raw potentially high risk foods were being stored over food not intended for further heating/cooking.
Corrective Action: These types of foods should only be stored on the lower shelves where any dripping would fall away from other foods.

Observation: The food slicer was dirty.
Corrective Action: This should be thoroughly cleaned after each period of use.

Corrective Action: This should now and routinely be thoroughly cleaned after each period of use and bottles and cans should not be stored within the ice.

Observation: There was evidence of mice activity within the dry food storage area.
Corrective Action: This area should now be thoroughly cleaned and pest control carried out.

Observation: The ice sink drainage plumbing is not fitted with an air gap to protect from risk of contamination in the event of a waste water back flow.
Corrective Action: An air gap should now be fitted.

Observation: The edge seal fitted to the lid of the ice cream chest freezer uses duck tape to hold in place.
Corrective Action: The duck tape should now be removed and the seal repaired.

Observation: The large Pepsi fridge used for main line foods within the kitchen had rusting shelves, was in need of cleaning, the door edge seals were in disrepair and a bowl was used to capture leaking condensate water within the fridge.
Corrective Action: The shelves should now be sealed leaving a smooth, impermeable and cleanable surface, the edge seals replaced, the fridge should now and routinely be thoroughly cleaned and the leaking condensate water investigated and repaired.

Observation: The small Pepsi fridge used as a service fridge was in need of cleaning and had rusting shelves.
Corrective Action: The fridge should now and routinely be thoroughly cleaned and the rusting shelves sealed leaving a smooth, impermeable and cleanable surface or replaced.

Corrective Action: Stored food should be adequately protected using fitted lids or surround wrap etc.
