Observation: Stand-up freezer showing excessive build-up of frost. Freezer temperature not cold enough (-8C), due to poor air circulation.
Corrective Action: Stand-up freezer requires defrosting, to improve air circulation and reduce freezer temperature to -18C.

Comments:

The following items noted at time of inspection (meets regulatory requirements)
- Liquid handsoap and paper towels at handwash sinks.
- Refrigerators recorded 4C, or b below
- Freezers recorded -16C
- Dishwasher sanitizing rinse recorded 100ppm chlorine
- Sanitizing spray bottles recorded 100ppm chlorine
- Ice scoop stored in sanitary manner outside of ice machine.
- Foodsafe certified staff on-site
- Permit to Operate posted in view of public
- Trans-Fat regulations reviewed with operator.

Discussed with operator to plan for upgrade renovations in 2010 (refinish any worn shelving to provide shelving surfaces that are smooth, non-absorbent and easy to clean. Replace food prep table in back storage room, to provide table surface that is smooth, non-absorbent and easy to clean. Upgrade 2-compartment sink, to provide sink and counter edges that are smooth, non-absorbent, easy to clean and free from any cracks or crevices. If any renovations are to be conducted, please submit plans to health dept, for review and approval, prior to any work being conducted.
