403  Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2))
Observation: Sliced sandwich meat stored at room temperature; surface temperature measured @ 14 degrees C. Coleslaw salad temperature measured 11 degrees c @ surface, raw ingredients also stored at same temperature - measured @ 2:30 pm.
Corrective Action: Ensure potentially hazardous foods are stored below 4 degrees C at all times. Sandwich meat, sandwiches and coleslaw discarded by chef.

Comments:

Operator advised not to receive foods unless the have been stored below 4 degrees C at all times.
With the exception of violations noted above, all refrigeration units are operating below 4 degrees c,
Walk in cooler is well organized and food is protected.
Dishwasher operation satisfactory - chlorine measured >100 PPM in final rinse.
Catering to Contemporary Food Services Security staff @ Pemberton Music Festival site : pizza, meatballs and pasta, sandwiches, soup. All foods transported in cambros for immediate consumption. disposable dishes.
