A summary of the violations found during the inspection are listed below.

110   Food Not Protected - General
Observation: Bags of french fries are stored immediately next to the handsink such that water drips down onto the bags when staff wash their hands.
Corrective Action: Provide a solution such that the water from the handsink does not contact the bags or fries. For example, install a splach guard or provide a permant cover for the cart of fries that protects them from contamination.
110   Food Not Protected - General
Observation: One of the line coolers was out of service at time of inspection. No food was being stored in the unit.
Corrective Action: Ensure that the cooler is repaired to better accomodate the cold storage needs of the kitchen.
116   Improper Construction / Maintenance of Establishment
Observation: Rubber flooring has been installed in the glasswasher area to address the concerns with water damage addressed on the previous report, however the mats are already warping.
Corrective Action: The rubber mats in the glasswasher area floors should be replaced with a more durable surface that is also smooth, non-porous and easily cleanable.
116   Improper Construction / Maintenance of Establishment
Observation: The dry storage area downstairs contains some unused, unnecessary materials. Also the dry storage area upstairs is crowded with too many materials, making it hard to clean. Materials are also noted to be stored very close to the hot water tank.
Corrective Action: Clean and organise the downstairs and upstairs dry storage area and remove all unnecessary materials so it is easier to clean.

Observation: The shelves in the dry storage area are not finished with an easily cleanble surface.
Corrective Action: Paint the shelves in the upstairs dry storage area.

Observation: Temperature logs are generally well maintained, however some days are missing.
Corrective Action: Ensure that temperature logs are filled out at least once per day.

Comments:

All protective temperatures meet regulatory requirements at time of inspection. dishwasher reaches required sanitizing temperature at time of inspection. Glasswasher reaches 12.5 pm iodine.

Items addressed from previous report:

Kick plates have been installed at the bottom of the bar area to prevent debris from accumulating behind and underneath equipment.
The bar floor area has been re-grouted and sealed.
The upper dry storage area has had cleanable tiles installed on the floor.
Some new door seals have been provided for the bar area coolers.
A significant improvement in fruit fly control was noted. No fruit flies observed during inspection.
The bare wood behind the bar has been refinished.
The flooring below the glasswasher was addressed but the surface is not appropriate, see item 116.
