Comments:

Met with operations manager and store manager to discuss recent inspection reports. Topics discussed included pest control, general cleaning and sanitation, future plans for the facility and room temperature storage of pizza sauce. On-going pest control program remains in place - both for monitoring for signs of rodent activity as well as to deal with flour beetles. A new container was purchased to store cornmeal and new store procedures are in place to ensure that container is thoroughly cleaned and sanitized between fills. The surrounding floor area will also receive extra cleaning attention every night. In general cleaning and sanitation of the facility had improved since the last visit. Some additional shelving will be installed in the back area to ensure that all stored items are 6 inches off the floor (pop, pizza boxes etc). Documentation was also provided for storage times for pizza sauce. Ensure that a time sticker is placed on the sauce container to guarantee proper rotation. It is not acceptable for pizza sauce to sit at room temperature longer than indicated in the food safety plan.

A follow-up inspection is scheduled before the end of this calendar year.
