Observation: Fruit flies observed in the bar area.
Corrective Action: Eliminate any potential breeding grounds for fruit flies. Any moist areas must be kept clean of any organic matter. Keep the garbage cans clean and dry and covered with tight fitting lids. Garbage bags should be changed more frequently. Keep the drink nozzles of the drink dispensers clean and sanitized. Should the problem fail to resolved, a pest control professional must be hired.

In house preparation/fermentation of pepperoni is being done in this facility. As per information provided by the chef, the pepperoni is fermented in the walk in cooler and always go through a cooking step before being served.
