Observation: The upright fridge on the line is not maintaining temperature < 4 C. Temperature of some food products measured in excess of 10 C. Chicken salad and crab were discarded. All other products moved to another cooler (produce and products that would undergo further cooking).
Corrective Action: Continue to monitor the temperature of the fridge, service unit as required. Do not use until the temperature is capable of maintaining food < 4C.
110   Food Not Protected - General
Observation: Temperature gauge for the dishwasher has not been repaired (noted on previous reports).
Corrective Action: Temperature gauge must be repaired or use an alternative method of monitoring the temperature of the rinse cycle (test strips or maximum reading thermometer).

Observation: Thermometers are not present in coolers.
Corrective Action: A thermometer must be placed in each cooler, in an easy to read location, temperature logs must be maintained.

Observation: Filters in the vent hood are very dirty and have a grease build-up.
Corrective Action: Filters must be cleaned immediately - ensure they are cleaned on a regular basis.

Comments:

Additional items noted/discussed at the time of inspection:
There is no designated handsink in the kitchen area (3-compartment sink is used for handwashing) - consideration should be given to installing an additional handsink.
Dishwasher final rinse temperature measured at 76 C at the plate = good.
Quat sanitizer in buckets for wiping clothes measured at 200 ppm = good.
Hot holding temperature are satisfactory (> 60C).
