Observation: Many buckets of soup cooling on the floor, no controls in place to ensure proper cooling is occurring.
Corrective Action: Do not store food on the floor. Also, provide proof that the current method can cool from 60 degrees to 4 degrees Celsius in 6 hours. Cooling charts provided with inspection report. Fill these out to verify that the process works and, if it does not alter the method (using, for example, multiple shallow pans, water baths or ice baths).
116   Improper Construction / Maintenance of Establishment
Observation: Some cleaning required behind and underneath equipment.
Corrective Action: Focus on the noodle making area and behind the stand up fridge in the the dish area.

Comments:

Premise otherwise well maintained. New dishwasher has been provided and reaches required sanitizing rinse temperature. All protective temperatures meet regulatory requirements at time of inspection.
