Observation: Neither of the quat spray bottles had a strong enough concentration of sanitizing solution. They were refilled using the chemical dispenser and still tested too weak.
Corrective Action: It was discovered that when the bottles were refilled the line for the sanitizer dispenser was not primed. This was corrected during inspection and an adequate strength was achieved. Ensure that staff are aware that lines must be primed before refilling spray bottles. Test strips should be kept on site to verify sanitizer strength when bottles are refilled.
110   Food Not Protected - General
Observation: Potentially hazardous lunch items were noted on ice at 10:30am. Although these items had just recently been removed from mechanical refrigeration, temperatures were already borderline (5C - 9C). It is also likely that temperatures will continue to rise throughout the lunch service as the inserts do not fit properly and were all full past the fill line. There is no system in place to ensure a 2 hour rotation.
Corrective Action: Ice baths are not an acceptable method for storage for potentially hazardous food that may be out for longer than 2 hours. These items should not be put out early and they should be marked with the time when they are removed from mechanical refrigeration. Leftovers should not be returned to the fridge after lunch service. Any food exceeding 2 hour mark must be discarded. An additional mechanical refrigeration storage unit for inserts would be ideal.

Corrective Action: Ensure that all coolers have thermometers.

Corrective Action: Hopper must be cleaned.

General cleaning and maintenance of area was satisfactory. Temperature of the 3 reach-in coolers and the self-serve buffet met regulatory requirements. Soup hot holding temperature measured >60C. Hand washing station equipped with liquid soap and paper towel. Final rinse cycle of dishwasher tested 71C measured at the place. Ventilation system will be due for servicing this month.
