102  Critical Food Not Protected From Contamination - Micro
Observation: Cooked or prepared foods are subjected to contamination. Cooked turkey being stored in walk-in liquor cooler.
Corrective Action: 1.Turkey destroyed and discarded at time of inspection. 2. No food is to be stored in walk-in liquor cooler.
108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizing rinse for dishwashing not at proper concentration for adequate time (Iodine 12.5ppm). Some iodine residual evident, but not at correct concentration and operator has no records (Sanitation log).
Corrective Action: 1.Have dishwasher serviced immediately. 2.Do not use dishwasher until concentration of sanitizer is correct - bottles and disposable glassware to be used. *Note: Fines not charged at time of inspection b/c iodine residual is low, but seems to be working.
113   Improper Sanitary Facilities
Observation: Inadequate handwashing facilities – liquid soap and paper towels are present at handbasin in bar area, but not wall-mounted.
Corrective Action: Handbasins must be kept clean and supplied with liquid soap and paper towels at all times during operation. Liquid soap and paper towels for handwashing - must be wall-mounted at handbasin.
121  Critical Repeat Inadequate food safety training - staff
Observation: None of employees presently on staff have completed the required food handler training program. (One employee on staff was at facility at time of inspection.)
Corrective Action: The operator must ensure that in their absence at least one employee on duty has a FoodSafe Certificate, as per Section 10(2) of the Food Premises Regulation.The fine for failing to have adequately trained employees is $230.00. Have staff of Chieftain Pub trained!

-wiping cloths stored in 100 ppm chlorine sanitizing solution=good!
-ice scoop stored separately from ice with handle facing out=good!
