Observation: Raw chicken and beef is being stored above vegetables in coolers.
Corrective Action: All raw meat must be stored below or separate from ready-to -eat food.

Observation: Cooked food products were found stored in the dry storage area; staff indicated this food had been there overnight.
Corrective Action: All potentially hazardous food must be stored below 4 degrees Celsius. Proper cooling procedure for food cooked in large batches was discussed with staff.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Food contact surfaces (cutting block) are not being sanitized after use.
Corrective Action: Sanitize food contact surfaces after use with a bleach solution.

Observation: Knives are stored in areas between tables and equipment that cannot be cleaned.
Corrective Action: Proper knife holder should be installed.

Corrective Action: Ensure there is always separation between food and the bottom of containers to prevent contamination of food. Used paper bags must not be used to cover food.

Corrective Action: Store ice scoop in clean container on top of machine to prevent contamination of ice.

Observation: The only sink designated as a handsink is in the staff washroom.
Corrective Action: A second sink (near the dishwasher) must be supplied with liquid soap and paper towel to promote proper handwashing by staff.

Observation: Used grease from the fryers is left on back step; this appears to be attracting animals.
Corrective Action: Dispose of used grease immediately or provide an animal-proof container for storage of used oil.

Observation: Filters in vent-hood have a build-up of grease.
Corrective Action: Filters must be cleaned and maintained on a regular basis.

Corrective Action: Cleaning of ceiling is required.

Observation: Several shelves are constructed of raw wood; cardboard is used as mats on floor and as shelf liner in coolers.
Corrective Action: All shelves and materials used in the kitchen must be constructed of a material which is easily cleaned. Cardboard must be removed.

Comments:

The temperature of all coolers, freezers and hot-holding units is satisfactory and thermometers available in each unit for monitoring purposes.
Dishwasher is working properly.
Good organization and cleanliness of dry storage area, food is protected from pests (open products placed in plastic containers).
A Food Safety Plan and Sanitation Plan is required for this faciltiy; reference material has been left with the staff to begin the process of developing these plans.
