- Fridge temperatures recorded below 4C
- Walk-in freezer temperature recorded -19C
- Temperature logs maintained daily
- Quats sanitizer used for wiping cloths and sanitizing dishware (200ppm Quats)
- Premise clean and well organized
- Janitorial area clean and well maintained
- Food storage well organized (food and equipment 6 inches up off floor; foods covered, labeled, dated)
- Foodsafe certified staff on-site
- Safe food handling procedures in place and observed
- Foods on cold-line and in hot-hoding units are timed and foods removed from service when timers expired.
