Observation: Cold line refrigeration unit in kitchen is no longer in service and has been replaced by less suitable equipment.
Corrective Action: As per Order, repair or replace cold line before November 7th 2009.
110   Food Not Protected - General
Observation: Accurate thermometers not available or used to evaluate hot holding, cooking, reheating and refrigerated storage temperatures.
Corrective Action: An accurate probe thermometer is required to measure internal temperatures.Ensure all refrigeration units are equipped with accurate thermometers. Monitor temperatures of potentially hazardous foods and follow food safety management plan.
113   Improper Sanitary Facilities
Observation: Inadequate handwashing facilities in kitchen - a dedicated handwash station is not provided.
Corrective Action: A dedicated handwash station must be installed in kitchen prior to November 7 2009 as per Order.

Observation: Hot and cold running water, under pressure, not provided at one handwash basin in ladies washroom.
Corrective Action: Operator will place basin out of service and repair by end of August 2009.
115   Inadequate Insect / Rodent Control
Observation: Effective measures not used to control entrance (rodent and insect proof construction) and harborage of rodents.
Corrective Action: Pest control agencies have been contracted an are working on this item. See Order items in public comments section.

Comments:

This is a follow up inspection to that of July 21, 2009;corrections have been made as follows:

1. cleaning of kitchen surfaces; this item requires more frequent attention.
2. Sushi line cooler has been repaired; temperature log sheets were provided to operator.
3. Hot water is now provided to all faucets except one in ladies washroom as per above noted violations.
4. Pest control measures are being implemented.

An Order pursuant to the BC Health Act was served on the operator. He was order to immediately:
1. Ensure all faucets throughout the facility are serviced at all times with hot and cold running water.
2. Retain a pest control management agency for the purpose of rodent control and elimination from the food facility; a continuous contract that includes minimum monthly monitoring by the pest control agency must be maintained and reports made available to the local Environmental Health Officer.
3. Ensure potentially hazardous foods are stored in accordance with sections 14 and 19 of the regulation by monitoring and recording temperatures of those foods at least once daily. Discard potentially hazardous foods stored above 4 degrees Celsius for a period of more that 2 hours.
and during anticipated closure in October of 2009 and before November 7th 2009:
· install a dedicated handwash station in the kitchen area and,
· repair or replace the cold line refrigeration unit in the kitchen with one in accordance with section 19 of the regulation. Advance plan approval must be received from the local Environmental Health Officer.
