Observation: 1.Sanitizing rinse for dishwashing not at proper concentration for adequate time ( Iodine 12.5ppm). Some iodine residual evident, but not at proper concentration.2.Sanitation logs not being maintained!
Corrective Action: 1.Do not use this machine until properly serviced. Confirm when complete. 2.Maintain sanitation logs! (Previously confirmed that machine was repaired and operating at proper concentration on 15/12/2005).

Observation: OUTSTANDING VIOLATIONS- from Inspection 14.12.2005 1.Arborite counter in food prep are very worn. 2.Counter in bar area is very worn. 3.Deli cooler not maintaining temp <4C, so only storage of non hazardous foods permitted.
Corrective Action: 1.Immediately replace arborite counter in food prep area. 2.Immediately replace counter in bar area. 3.Present food storage in deli display case is non hazardous foods only (ie acidic salad dressings), but replacement or removal of the unit should be completed within the year.

NOTE:Food temperatures were not checked at time of inspection.

Final rinse of dishwasher >72C internal temp (good!) - gauges not checked for readings >82C/>180F.
