Observation: The faucet at the end of the bar next to the glass washer was leaking.
Corrective Action: Fix the faucet so the water can be completely shut off.

Observation: Temperatures are not being checked on a regular basis for the coolers.
Corrective Action: Each unit was equipped with a thermometer - use these to conduct once daily temperature checks and record results in a daily log that is available for inspection. This item was also noted on the 2011 inspection report.
502   Equipment/utensils/food contact surfaces are durable/easily cleaned/ & free from toxic substances (Sec 16(a)(ii))
Observation: Tape was observed in a number of areas behind the bar (to seal off a hole in the counter by the far end sink, as a barrier to keep the liquor bottles from falling on the floor in front of the ice well etc.). These areas cannot be easily cleaned and are potential harborage areas for dirt and bacteria.
Corrective Action: Remove all tape and replace with alternative materials that are durable and can be easily cleaned.
508   Adequate equipment/facilities available for sanitary maintenance (Sec 17(3))
Observation: The sanitizer bottle for the glasswasher was empty, there was no back-up product available on site.
Corrective Action: A staff person left the site during the inspection to get sanitizer. For future, ensure there is always at least 1 bottle of back-up product kept on site and that the unit is checked each day prior to operating to make sure the bottle in use is not empty.
802  Critical Premises are free of pests (Sec 26(a)
Observation: Fruit flies were noted during today's visit. The staff person on duty indicated that there is professional pest control in place. They seemed to be highest in numbers around the ice wells and sinks.
Corrective Action: Consult with the pest control company about obtaining a foam treatment for the drains that can be applied by staff at night. Keep the area under the bar as free of clutter as possible so that regular cleaning can be conducted.

Comments:

Hand washing facilities are provided. Sanitizer was available - 200ppm quat. Cooler temperatures met regulatory requirements (< 4C); thermometer noted.
