Observation: The food slicer had not been cleaned after use.
Corrective Action: This equipment should be thoroughly cleaned after each period of use.
103  Critical Food Not Protected From Contamination - Other Sources
Observation: The inside of the doors and underside of both ice makers were dirty and had mould growth.
Corrective Action: These should now and routinely be thoroughly cleaned.
105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: Food was noted being stored routinely on ice and some food products stored within the pizza line cooler and the salad line fridge were above +4C.
Corrective Action: Routinely keeping food on ice is not acceptable and commercial refrigeration should be used for storing food products and all such items should be stored at +4C or below at all times and in line with good HACCP practices temperature records should be kept. The line containers should not be overfilled.

Observation: The grill fridge door edge seals were dirty and damaged.
Corrective Action: These should now be replaced and routinely cleaned.

Corrective Action: Each bar should be provided with these basic hand washing requirements.

Observation: The protective light covers are missing from the florescent light tubes within the wash-up/food storage area.
Corrective Action: These should now be replaced.

Observation: The oven situated beneath the grill is not working and grease is running into it from the hot plate above.
Corrective Action: Redundant work equipment should be removed from the premises or repaired and kept clean.

Observation: The main oven was dirty with much baked on food. The oven door could not be kept closed without the use of folded cardboard used as a wedge.
Corrective Action: The oven should now and routinely be thoroughly cleaned and the oven door repaired.
