Observation: Hot holding unit was turned off while inspection was being conducted.
Corrective Action: Ensure hot holding units are turned on at all times when food is present in the units. The equipment was switched on again at the time of inspection.

Observation: Raw food stored above ready to eat foods in all coolers.
Corrective Action: Do not store raw food above ready to eat foods. Re-organise all coolers and designate a section in the bottom of each for raw foods only. Corrected at time of inspection.

Corrective Action: Provide covers for all food containers in the walk-in cooler (lid or plastic wrap).

Comments:

All protective temperatures meet regulatory requirements at time of inspection.
Professional pest control is currently providing routine service. Receipts available for pest control at time of inspection - good. No evidence of pests at time of inspection.
