Observation: The upright freezer is full of ice, dirty and has raw wood on the inside of the door that is moldy.
Corrective Action: Freezer must be cleaned and all raw wood removed.

Observation: The lids on the dry goods have a build-up of dirt and food debris.
Corrective Action: Lids must be cleaned.
116   Improper Construction / Maintenance of Establishment
Observation: There is grease and food build-up under the cooking equipment and in the hood filters.
Corrective Action: These areas must be cleaned and must be kept clean.

Observation: The walk-in cooler has a build-up of food debris and mold on the shelves and the floor.
Corrective Action: Cooler must be cleaned and maintained clean.

Observation: Cardboard is being used on the floor under equipment and on the grease trap.
Corrective Action: All cardboard must be removed from the kitchen area - completed at the time of inspection. Ensure that cardboard is not used as mats or to catch grease drips.

Observation: There are raw wooden shelves in the dishwashing area that are dirty/moldy and cannot be properly cleaned.
Corrective Action: All raw wood must be replaced(or removed) with a surface that is cleanable - complete by March 18/08.
122  Critical Repeat Inadequate Food Safety Plan
Observation: A Food Safety Plan has not been completed and approved for this facility.A Food Safety Plan is required under Section 23 of the Food Premises Regulation. The fine for failing to have written food handling procedures is $230.00.
Corrective Action: A Food Safety Plan must be submitted (dropped off at the Pemberton Health Centre) by February 25/08, if not recieved a violation ticket will be issued.

Comments:

Violations noted on the previous report include # 110, 116, 122. These must be completed/addressed by March 3/08 (food safety plan must be received by Feb 25/08).

Violations that have been addressed since the previous inspection:
110 - There is no food being stored in non-food grade containers. Tools are now being stored separate from food products.
116 - The leak from the freezer has been repaired.

Additional items noted at the time of inspection:
All refrigeration temperatures are good.
The dishwasher rinse temperature was measured at 74 C at the dish = good.
