Observation: 1) Kitchen floor paint has worn and bare concrete is exposed in some areas of kitchen floor. 2) Some counters and shelving in kitchen are showing wear. Some counter and shelf edges are worn and cracked and no longer easy-to-clean. 3) Ceiling vents in kitchen showing grease and dust build-up. 4) Outside garbage/recycling area is dirty and disorganized. 5) A build-up of dirt and grease is visible on floor, walls, ceiling, under and behind equipment in kitchen.
Corrective Action: 1) Clean, paint or refinish kitchen flooring to provide a floor surface that is durable, smooth, non-absorbent, easy to clean and non-slip. No bare concrete. Provide schedule for repairs by October 31, 2013. 2) Repair or replace worn counters and shelving. Counter and shelving surfaces must be smooth, non-absorbent, free from cracks and crevices, durable and easy-to-clean. Ideally replace worn wooden counters and shelving with commercial, stainless steel, food prep tables and shelving. Provide schedule for repairs by October 31, 2013. 3) Clean kitchen ceiling vents on a regular basis. To be completed by October 31, 2013. 4) Outside garbage/recycling area requires cleaning, organizing and regular maintenance. To be completed by October 31, 2013. 5) A thorough cleaning and degreasing is required in all areas of kitchen, especially under and behind equipment. Cleaning must be maintained on a regular basis. to be completed by October 31, 2013.

Observation: 1) Several pans of food observed stored on floor in walk-in cooler 2) Orange juice beverage container observed stored inside ice machine.
Corrective Action: 1) All foods must be stored on shelving a minimum of 6 inches up off floor. 2) Ice machine cannot be used as cold storage for beverage containers. Ice machine to be used for storage of ice only! (container removed at time of inspection)

Comments:

- Freezer temperatures recorded -16C, or below
- Dishwasher sanitizing rinse water temperature recorded above 180F
- Wall-mounted liquid handsoap and paper towel dispensers provided at handwash stations
- Thermometers provided inside coolers
- Temperature logs maintained.
- Quats sanitizer in spray bottles provided for sanitizing food contact surfaces (200ppm Quats)
- Permit posted in visible location
- Foodsafe certified staff on-site

The following items corrected since last inspection:
102. New flooring installed in walk-in cooler and storage room.
Waterproof backsplash (stainless steel) installed behind dishwashing area.
