Observation: The dishwasher is not showing any detectable sanitizer in it. A 20 Liter chlorine sanitizer container is being used as a source of sanitizer for this dishwasher. According to the operator, this container was last changed about a year ago.
Corrective Action: Considering the extent of use of this dishwasher, a 20 L sanitizer bucket may be too big for this facility. Please use smaller sanitize containers to ensure that the sanitizer is not expiring or loosing its strength. At the time of this inspection, this violation was corrected by changing the sanitizer container.
110   Food Not Protected - General
Observation: Temperature records are not available for the refrigeration and hot holding equipment.
Corrective Action: Maintain daily temperature records for all refrigeration, freezing and hot holding equipment.

Observation: Sanitizer measuring test strips are not available.
Corrective Action: Provide chlorine test strips to measure sanitizer concentrations in the dishwasher maintain daily records for the sanitizer concentrations.
122  Critical Inadequate Food Safety Plan
Observation: The food safety plan is not complete for all the food items.
Corrective Action: Complete the food safety plan to include all major food items on the menu. The current available plan only addresses one food item.

Comments:

All temperatures are meeting health requirements and all hand washing facilities are equipped with the soap and paper towel. The violation involving the dishwasher was corrected at the time of inspection by changing the sanitizer container. A food safety plan is available but it is not complete.
