Observation: Food containers/boxes stored on the floor both in the walk-in cooler and the dry storage area.
Corrective Action: Store all the food containers minimum 6 inch above the floor to facilitate cleaning and to avoid contamination of the container bottoms ( that can potentially contaminate the food contact surfaces when relocated for further preparation.)

Corrective Action: Please maintain temperature logs for all refrigeration, freezing and hot holding equipment.

Other items observed/discussed at the time of this inspection
1. All temperatures are meeting health requirements.
2. The spray bottles have 200 ppm quat sanitizer solution to sanitize the food contact surfaces.The facility is equipped with an automatic sanitizer/detergent dispenser.
3. The dishwasher is sanitizing at 50 ppm chlorine concentration. Recommend daily testing and recording of chlorine readings in the dishwasher sanitizing cycle.
4. The only washroom in this facility is out of order at the time of this inspection. According to the shift manager the washroom is in the process of getting fixed.
5. According to the information provided by the shift manager he is not certified in Food Safe Level 1. However, there was one employee with the Food Safe Level 1 training working at the time of this inspection. As a plan to ensure that there is always one person with the Food Safe training working on site, all the shift managers should also have Food Safe Level 1 training.
