Observation: Plenty of old equipment, old florescent lights, and other items being stored in the storage area above walk in freezer and walk in cooler in the back kitchen.
Corrective Action: Please remove any unnecessary materials from the premises.

Comments:

In compliance items:
- Refrigeration temperatures are below 5 degree Celsius.
- Temperature logs are being maintained.
- Thermometers available in all the cooling units.
- The undercounter high temperature dishwasher in the front kitchen is sanitizing at >71 degree Celsius on the dishes. At the time of this inspection, the old dishwashing equipment in the back kitchen is being replaced with a new machine. All the dishes are being washed in the dishwasher in the front kitchen.
- Food storage practices appear to be satisfactory.
- The hand washing sinks are supplied with soap and paper towel. At the time of this inspection, the front side of the kitchen, which has a separate hot water tank, has ran out of hot water. This is due to the fact that all the dishes are being washed on the front dishwasher as the dishwasher in the back kitchen is being replaced. The new dishwasher in the back is expected to be running by tomorrow.
- Sanitizer spray bottles providing >200 ppm quat sanitizer.
- Food handling practices appear to be satisfactory.
- No signs of any pest infestation. The facility has a regular contract with a pest control professional.
- Foodsafe certified food handlers available.
- General cleanliness in the facility is satisfactory.

Recommendation: The cleanability around the grease trap underneath the sink in the front kitchen can be improved by providing a waterproof finish over the rough cardboard like material around the grease trap.

A follow up inspection required to verify the availability of enough hot water in the front side of the kitchen.
