507  Critical Repeat Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The dishwashing machine has not yet been repaired. The operator advises that he is waiting for the spare parts for the machine to arrive.
Corrective Action: Repair the dishwasher within 7 days from the date of this inspection. Failing to repair the machine by the target completion date may result in $230 violation ticket. In the meantime, all the utensils must be manually sanitized in 100 ppm bleach after running through the dishwasher.
604  Critical Repeat Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: Chicken is being thawed in the only hand washing sink available inside the kitchen. The hot side of the tap on this sink is not working and has to be operated from underneath the sink. This violation remains uncorrected despite repeated requests by the EHO.
Corrective Action: The hand sink must not be used for thawing food. The tap on the sink must be repaired within 7 days of this inspection. Failing to correct this violation may result in $230 violation ticket.

Comments:

The following items have been corrected:
- An additional hot water tank has been installed.
- A new florescent light has been installed in the dry storage room.
