502   Equipment/utensils/food contact surfaces are durable/easily cleaned/ & free from toxic substances (Sec 16(a)(ii))
Observation: Tape and plastic wrap was observed in what should be smooth, easy to clean areas behind the bar.
Corrective Action: This item was noted on last year's inspection report. Remove all tape and plastic wrap, all surfaces must be smooth and easy to clean.
503   Equipment/utensils/food contact surfaces are in good working order (Sec 16(b))
Observation: The rubber curtain on the glass washer is missing some panels which is allowing water to spray out and contaminate clean glassware and counters.
Corrective Action: Replace the missing rubber curtain. This item has been outstanding since November 2011.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: A build up of filth was noted under the bar and between equipment. During the inspection, a thick black residue was scraped out from between the glass washer and the adjacent counter. Mildew was noted inside the glass washer, staff indicated the machine is not taken apart and cleaned on a daily basis.
Corrective Action: Overall sanitation of the facility must be improved. The floors under the bar will likely need to be scraped to clear away the build up of grime (especially at the end by the glasswasher). The glass washer must be dismantled and cleaned more frequently.
802  Critical Premises are free of pests (Sec 26(a)
Observation: Fruit flies were noted during today's inspection, including some that were floating inside alcohol bottles.
Corrective Action: This violation has also been noted on past inspection reports. Reducing fruit fly populations requires a multipronged approach including reducing moisture and decaying food debris under the bar, more frequent cleaning of hard to reach spaces and collaborating with your pest control company on prevention strategies. For alcohol bottles with quick pour spouts, use plastic wrap or replace with proper screw top lids to prevent access by fruit flies.
