Observation: The wall and floor junctions in the walk in cooler and walk in freezer are not properly sealed and have accumulated food debris in them.
Corrective Action: The wall and floor junctions must be sealed to prevent accumulation of debris.

Observation: Some of the tiles on the wall floor junction are broken/in need of repair. Some tiles around the mop sink are broken.
Corrective Action: The broken tiles must be replaced. The tiles around the mop sink must be repaired to keep the area clean.

Comments:

At the time of this inspection, the air temperature in the lower refrigeration case of the taco preparation line cooler was below 5 Degree Celsius. However, the operator was only storing food in the inserts in on the top portion. The cooling is being supplemented by keeping the ice cubes underneath the inserts. The store manager was made aware that using the ice cubes in the cooler may result in the thermostat malfunctioning and therefore should not be used. The operator is advised to do more rigorous monitoring for the temperature of this cooler.
