Comments:

Initial inspection conducted to assess construction of premises.

The following items must be addressed prior to the issuance of an operating permit:

Downstairs:
1. Refinish the backsplash to the mop sink with a durable kitchen or bathroom paint.
2. Seal the mop sink to the floor so that no water can pool underneath the mop sink basin.
3. Ensure that hand sanitizer is not used in the hand sink in the prep room - use hand soap instead.
4. The prep table with associated sink next to the oven in the prep room needs to be connected.
5. Ensure the walk-in cooler compressors are functioning properly - some pooling of water was noted in the storage room behind the prep room.
6. Repair/fill the holes in the male bathroom (one was noted behind the cinder blocks underneath the storage lockers, one was noted in the wall of the male bathroom behind the door).
7. Cap the holes in the floor in the hallway next to the stairwell (looks like two pipes coming up out of the floor - unsure of their purpose).
8. Some tiles are chipped in the showers, particularly the male shower - does not necessarily need to be fixed if they are not going to be used).

Upstairs:

1. Fix the leak in the prep sink faucet adjacent to the dishwash area.
2. Parts of the servery sink at the front of house needs to be refinished - the sides are warped and the particle board finish is exposed on the top, allowing moisture and spills to be absorbed into the material. Also, the cabinet is missing a front panel.
3. The serving area next to the kitchen where the point of sale terminal will be located still needs to be finished.
4. The glasswasher area in the bar should be installed such that water splashing is not permitted to drip behind the draft area, glasswasher or adjacent tables as the unfinished backing behind these items will absorb the water and cause water damage over time (note - coving has already been installed and will serve as a barrier to prevent moisture from wicking up into the wood from the floor.)

Prior to the issuance of an operating permit, ensure that the coolers, dishwasher and all other equipment are operating correctly. This should be demonstrated at the next inspection.
